Our wine making

At the beginning of the process, the winemaker – like an artist – has only a sense of what will emerge at the end. Piece by piece, from the ingredient elements, the wine slowly takes shape during the process of creation. Just as, for the artist, paints or other materials are a prerequisite for a successful outcome, the winemaker relies on healthy and ripe grapes from which to craft complex, aromatic wines. The art of each is ultimately to draw together a broad palette of different influences into a single unique and complete work.

From the vine to the finished wine is a long path to travel. Our experienced winemakers, Christine Pröstler and Philipp Maurer, are dependable companions on that journey. These two graduate oenologists spend at least three months every year advising our vintners, monitoring the ripeness of the grapes and determining the ideal moment to harvest.

They also supervise the careful removal of the stalks, the gentle pressing and the storage of the resulting musts in the fermentation tank. While the wine slowly assumes its character, the winemaker and cellar master continually monitor the progress of the fermentation through regular tastings. When the wine achieves the ideal balance of acidity and fruit, it is transferred to the storage tank to mature.

The highest art of winemaking is ultimately the composition of cuvées. In this process, different varietals are combined in such a way that they precisely reflect the individual style of a given wine brand.
